When Summertime isn't showing up properly and there is no vacation in near sight, the only way to get that holiday feeling back is to go to your kitchen and do some magic there...
Today I wanted to get into an italian mood, so I cooke a wonderful and tasty "Tuscan Breadsalad"... ideal to use that older bread that isn't as enjoyable anymore, but still too good to throw away...
Here the needed ingredients:
Red onion & Spring onion
Italian herbs mixture
Salt & Pepper
and a pinch of Sugar
To start, cut the bread into bite sized pieces. Put some Olive oil into the pan and slowy roast the bread. Add some garlic cloves, season with some salt , pepper and some of the italian herbs mixture. When the bread is golden brown, take the pan away from the heat and let cool.
Slice the red onion and the spring onion, dice the tomatoes (works also very well with Cherry tomatoes!) and add to the onion. Tear the basil into small pieces and also add to the salad. Drizzle some olive oil and balsamic vinegar over the tomatoes and season with salt and pepper and add a pinch of sugar. Mix all together and let it rest, so the flavors can properly mix together.
When ready to serve, add the bread to the tomatoes and serve immediately, so everyone gets to enjoy the crunchiness of that delicious bread...
